Greek Salad and Bruschetta
BruschettaIngredients:  1 Large Tomato, chopped1 Clove of Garlic, minced2-3 Tbsp. of Basil 1 Tbsp. of Olive Oil 1 Teaspoon of Balsamic Vinegar Salt and Pepper to taste Feta Cheese 1 Baguette of French Bread (or similar bread)
How to Make It:1. Before chopping up tomatoes, gut the insides and set aside. Chop up the rest into small pieces. Mix the tomatoes,  garlic, basil, vinegar, salt, pepper and olive oil.2. Preheat the oven to 450 degrees. Lightly coat the top of the bread with olive oil (using a brush) and place the bread oil side down on a cookie sheet. Bake the bread (on the top rack) for about 5-6 minutes. Once finished, take the bread out and place on the plate oil side up.3. Cover the top of the bread with tomato mix and then sprinkle with feta cheese.
Greek SaladIngredients: Romaine Lettuce Sliced Red Beets (I use canned) Small Black Olives (pitted)Cucumber Red Onion Tomato Feta Cheese Greek Dressing
How To Make It:1. Chop up all veggies, mix together in a bowl, add dressing and Feta cheese.

Black Bean Burgers with Guacamole Cream and Sweet Potato French Fries
Black Bean Burgers (Serves 8)Ingredients:  2 Fifteen Ounce Cans of Black Beans, Rinsed and Drained1 Ten Ounce Can of Ro-Tel Tomatoes and Green Chilies, Drained1 Egg, Beaten3/4 Cup of Bread Crumbs1/3 Cup of Onion, Minced1 Heaping Tsp. of Chile Powder1 Heaping Tsp. of Oregano 1 Tsp. of Salt  1/4 Tsp. of Black Pepper
How To Make It1. Mash the beans with a potato masher in a larger mixing bowl. I spent about five minutes mashing, trying to make the beans as creamy as possibly.2. Add the rest of the ingredients and mix well. The mixture will be wet. Add additional bread crumbs if desired. Refrigerate for one hour.3. Heat a large skillet over medium heat and generously grease the bottom. Drop heaping 1/3 cups full of the burger mixture into skillet and use a spatula to create patty shapes. Cook for about 4-6 minutes on each side, CAREFULLY flipping, the burgers are very fragile. Cook in batches. You can freeze the leftover burger if necessary. Serve on whole wheat buns with Guacamole Cream.
Tip: Do not expect the burgers to get as stable as a regular beef hamburger, the beans stay much softer.
Guacamole CreamIngredients1 Avocado, Mashed 2 Tbs. Sour Cream1/4 Cup of Onion, Minced 2 Tbs. of Parsely  Two squeezes of fresh Lime juice Salt and Pepper to taste
How To Make It1. Combine all ingredients in a small bowl. Season to taste. Refrigerate until serving.
Sweet Potato French Fries (Serves 3)Ingredients: 2 Sweet PotatoesExtra Virgin Olive Oil1 Tsp. of SugarMrs. Dash Southwest Chipotle SeasoningSalt and Pepper
How to Make It1.  Preheat oven to 450 degrees. 2.  Rinse, peel, and slice potatoes. 3.  Lightly drizzle potatoes in olive oil and evenly sprinkle with the sugar, seasoning, salt, and pepper. 4.  Bake fries in oven for 25 minutes, flipping after about 15 minutes.

Spicy Egg Salad Sandwich (serves 3-4)
Ingredients: 4 Eggs, Boiled and Chopped 1/4 cup Onion, Minced 2 Tsp. of Mustard 3 Tsp. of Mayo  1 Tsp. of Paprika  Salt and Pepper to taste Whole Wheat Bread (toasted)
Optional: 1 Medium-sized Tomato  Romaine Lettuce Giardiniera Peppers Horse Radish Mustard
How to Make It 1. In a bowl, mix eggs, onion, mustard, mayo, paprika, salt and pepper. The mixture should be fairly dry. If the mixture is more liquid, refrigerate for a few hours. 2. Spread the mixture on toast, add giardiniera peppers (to taste), a couple slices of tomato, lettuce, and horse radish mustard. 3. Enjoy!
