&lt;p&gt;&lt;strong&gt;Bruschetta&lt;/strong&gt;&lt;br/&gt;&lt;strong&gt;&lt;em&gt;Ingredients: &lt;/em&gt;&lt;/strong&gt;&lt;br/&gt; 1 Large Tomato, chopped&lt;br/&gt;1 Clove of Garlic, minced&lt;br/&gt;2-3 Tbsp. of Basil&lt;br/&gt; 1 Tbsp. of Olive Oil&lt;br/&gt; 1 Teaspoon of Balsamic Vinegar&lt;br/&gt; Salt and Pepper to taste&lt;br/&gt; Feta Cheese&lt;br/&gt; 1 Baguette of French Bread (or similar bread)&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;How to Make It:&lt;/strong&gt;&lt;br/&gt;&lt;strong&gt;1.&lt;/strong&gt; Before chopping up tomatoes, gut the insides and set aside. Chop up the rest into small pieces. Mix the tomatoes,  garlic, basil, vinegar, salt, pepper and olive oil.&lt;br/&gt;&lt;strong&gt;2.&lt;/strong&gt; Preheat the oven to 450 degrees. Lightly coat the top of the bread with olive oil (using a brush) and place the bread oil side down on a cookie sheet. Bake the bread (on the top rack) for about 5-6 minutes. Once finished, take the bread out and place on the plate oil side up.&lt;br/&gt;&lt;strong&gt;3.&lt;/strong&gt; Cover the top of the bread with tomato mix and then sprinkle with feta cheese.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Greek Salad&lt;/strong&gt;&lt;br/&gt;&lt;em&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/em&gt;&lt;br/&gt; Romaine Lettuce&lt;br/&gt; Sliced Red Beets (I use canned)&lt;br/&gt; Small Black Olives (pitted)&lt;br/&gt;Cucumber&lt;br/&gt; Red Onion&lt;br/&gt; Tomato&lt;br/&gt; Feta Cheese&lt;br/&gt; Greek Dressing&lt;/p&gt;

&lt;p&gt;&lt;em&gt;&lt;strong&gt;Black Bean Burgers (Serves 8)&lt;/strong&gt;&lt;/em&gt;&lt;br/&gt;&lt;em&gt;&lt;strong&gt;Ingredients: &lt;/strong&gt;&lt;/em&gt;&lt;br/&gt; 2 Fifteen Ounce Cans of Black Beans, Rinsed and Drained&lt;br/&gt;1 Ten Ounce Can of Ro-Tel Tomatoes and Green Chilies, Drained&lt;br/&gt;1 Egg, Beaten&lt;br/&gt;3/4 Cup of Bread Crumbs&lt;br/&gt;1/3 Cup of Onion, Minced&lt;br/&gt;1 Heaping Tsp. of Chile Powder&lt;br/&gt;1 Heaping Tsp. of Oregano&lt;br/&gt; 1 Tsp. of Salt &lt;br/&gt; 1/4 Tsp. of Black Pepper&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;How To Make It&lt;/strong&gt;&lt;br/&gt;&lt;strong&gt;1.&lt;/strong&gt; Mash the beans with a potato masher in a larger mixing bowl. I spent about five minutes mashing, trying to make the beans as creamy as possibly.&lt;br/&gt;&lt;strong&gt;2.&lt;/strong&gt; Add the rest of the ingredients and mix well. The mixture will be wet. Add additional bread crumbs if desired. Refrigerate for one hour.&lt;br/&gt;&lt;strong&gt;3.&lt;/strong&gt; Heat a large skillet over medium heat and generously grease the bottom. Drop heaping 1/3 cups full of the burger mixture into skillet and use a spatula to create patty shapes. Cook for about 4-6 minutes on each side, CAREFULLY flipping, the burgers are very fragile. Cook in batches. You can freeze the leftover burger if necessary. Serve on whole wheat buns with Guacamole Cream.&lt;/p&gt;
&lt;p&gt;&lt;br/&gt;&lt;strong&gt;Tip:&lt;/strong&gt; Do not expect the burgers to get as stable as a regular beef hamburger, the beans stay much softer.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Guacamole Cream&lt;/strong&gt;&lt;br/&gt;&lt;em&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/em&gt;&lt;br/&gt;1 Avocado, Mashed&lt;br/&gt; 2 Tbs. Sour Cream&lt;br/&gt;1/4 Cup of Onion, Minced&lt;br/&gt; 2 Tbs. of Parsely &lt;br/&gt; Two squeezes of fresh Lime juice&lt;br/&gt; Salt and Pepper to taste&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;How To Make It&lt;/strong&gt;&lt;br/&gt;&lt;strong&gt;1.&lt;/strong&gt; Combine all ingredients in a small bowl. Season to taste. Refrigerate until serving.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Sweet Potato French Fries (Serves 3)&lt;/strong&gt;&lt;br/&gt;&lt;em&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/em&gt;&lt;br/&gt; 2 Sweet Potatoes&lt;br/&gt;Extra Virgin Olive Oil&lt;br/&gt;1 Tsp. of Sugar&lt;br/&gt;Mrs. Dash Southwest Chipotle Seasoning&lt;br/&gt;Salt and Pepper&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;How to Make It&lt;/strong&gt;&lt;br/&gt;&lt;strong&gt;1. &lt;/strong&gt; Preheat oven to 450 degrees. &lt;br/&gt;&lt;strong&gt;2. &lt;/strong&gt; Rinse, peel, and slice potatoes. &lt;br/&gt;&lt;strong&gt;3. &lt;/strong&gt; Lightly drizzle potatoes in olive oil and evenly sprinkle with the sugar, seasoning, salt, and pepper. &lt;br/&gt;&lt;strong&gt;4. &lt;/strong&gt; Bake fries in oven for 25 minutes, flipping after about 15 minutes.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Ingredients: &lt;/strong&gt;&lt;br/&gt;4 Eggs, Boiled and Chopped &lt;br/&gt;1/4 cup Onion, Minced &lt;br/&gt;2 Tsp. of Mustard &lt;br/&gt;3 Tsp. of Mayo  &lt;br/&gt;1 Tsp. of Paprika  &lt;br/&gt;Salt and Pepper to taste &lt;br/&gt;Whole Wheat Bread (toasted)&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;Optional: &lt;/em&gt;&lt;/strong&gt;&lt;br/&gt;&lt;em&gt;1 Medium-sized Tomato  &lt;/em&gt;&lt;br/&gt;&lt;em&gt;Romaine Lettuce &lt;/em&gt;&lt;br/&gt;&lt;em&gt;Giardiniera Peppers &lt;/em&gt;&lt;br/&gt;&lt;em&gt;Horse Radish Mustard&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;How to Make It&lt;/strong&gt; &lt;br/&gt;&lt;strong&gt;1. &lt;/strong&gt;In a bowl, mix eggs, onion, mustard, mayo, paprika, salt and pepper. The mixture should be fairly dry.
